The Story
Cascade & Coal opened in the spring of 2026 on the corner of 12th and Pine. The dining room is forty seats, low light, oak and leather. The kitchen is one hearth, three cooks, and a wine list that reads like a quiet argument between Burgundy and the Yakima Valley.
Chef Mara Lindgren spent six years on the line at Canlis before opening Cascade & Coal. The menu is short by design — six or seven dishes that change with what comes off the coast and out of the Cascades each week. The bar leans toward American whiskey. The room is built around a fire.

We seat from 5:30 to 10. Tuesday through Saturday.
